I don't use the supplied dowels, I turn a tenon just a bit larger than .50". No need for glue and have had no failures yet.

These stoppers seal every bottle I've tried well enough to lay the bottle on it's side and no leaks. They have the additional advantage that I can glue them into a hole drilled in the bottom of my whittling blank. One modification i do make- when the stopper is carved, finished, and glued to the dowel I use clear silicone caulk to seal the stopper to the dowel- no moisture can ge in, and the stopper won't come off the dowel and get stuck in the bottle.
